A proper Durban lamb curry made on the fire. Beautiful lamb pieces, a homemade curry masala with the iconic flavours of Durban. Extremely flavorful, with some spicy heat, of course. Heartwarming and mouthwatering. Very delicious!
Recipe
∙ 2kg Lamb or mutton( Increase cooking time when using mutton)
∙ Oil
∙ 1 tablespoon cumin seeds
∙ 3 star anise
∙ 1 teaspoon fennel seeds
∙ 5 bay leaves
∙ 4 onions (2 Red & 2 white)
∙ 3 Green chillies( I used Cayenne)
∙ 5 cardamom pods
∙ 1 cinnamon stick
∙ 5 tablespoons Ginger and Garlic paste
∙ 1kg grated fresh tomatoes
∙ 2 mutton or lamb stock cubes
∙ ½ CUP HOMEMADE DURBAN CURRY MASALA
∙ 2 tablespoons sugar
∙ 1 Potato (very small cubes)
∙ 6 Potatoes (quarter chunks)
∙ about 1,5 - 2 Liters of water (use as required)
Homemade Ginger Garlic Paste
∙ ½ cup Fresh Ginger (peeled)
∙ ½ cup Fresh Garlic cloves
∙ A few pinches of salt
∙ ¼ cup oil
Blended together
Homemade Durban Curry Masala (Perfect with Lamb, mutton, beef, chicken, or vegetarian recipes)
∙ 3 tablespoons mild curry powder
∙ ½ tablespoon HOT curry powder (You can increase if you want a HOT curry)
∙ 3 tablespoons fine Coriander
∙ ½ teaspoon fine cloves
∙ 2 tablespoons onion powder
∙ 1 tablespoon Kashmiri chilli powder
∙ 1 tablespoon paprika
∙ 1 tablespoon fine cumin
∙ 1½ tablespoons dried thyme
∙ ½ tablespoon turmeric
∙ 1½ teaspoons fine fennel

∙ 2 grated carrots
∙ 2 tomatoes
∙ 1 small onion
∙ 2 Green cayenne chillies
∙ Salt & pepper
∙ 1-2 tablespoons white vinegar
