Today made an eggplant 🍆 side dish. It’s perfect for dinner or as a snack. If you vegetarian this recipe for you.

1 pound (about 500g) eggplant
3 cloves garlic
2 tbsp. soy sauce
1 tbsp. sesame oil
1 tsp. white vinegar or lemon juice
½ tsp. powdered chili pepper
2 tsp. toasted sesame seeds
Instructions:
1. Start by preparing your steamer by adding 2 cups of water. Set it over high heat and bring to a boil.
2. Meanwhile, cut the eggplants in half lengthwise.
3. Once the water starts boiling, place the eggplants on the steamer rack and cover. Steam over medium-high heat for about 5 minutes.
4. Let’s make the sauce. Finely chop 3 cloves of garlic. In a mixing bowl, combine garlic, 2 tbsp. of soy sauce, 1 tbsp. of sesame oil, 1 tsp. of white vinegar or lemon juice, ½ tsp. of powdered chili pepper and 2 tsp. of toasted sesame seeds.
5. Remove the eggplants from the heat. Transfer to a plate and let cool for 5 to 10 minutes until they’re easy to handle.
6. Cut each piece into bite-size pieces. Add the eggplant to the bowl and mix well.
7. Transfer to a serving plate. Top with some chopped parsley and extra sesame seeds.
8. Enjoy.
