Here's a simple recipe for Bangladeshi-style lentil dal with watermelon rind:
Ingredients:
1 cup red lentils (masoor dal), washed and drained
2 cups watermelon rind, peeled and chopped into small pieces
1 onion, finely chopped
2 cloves garlic, minced
1-inch piece of ginger, minced
2 green chilies, sliced (adjust according to your spice preference)
1 tomato, chopped
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon chili powder (adjust to taste)
Salt to taste
2 tablespoons oil
Fresh cilantro leaves for garnish
Instructions:
Heat oil in a large saucepan or pot over medium heat. Add chopped onions and sauté until they turn translucent.
Add minced garlic, ginger, and sliced green chilies. Sauté for another couple of minutes until the raw smell disappears and the mixture is aromatic.
Stir in the chopped tomato and cook until it becomes soft and mushy.
Add the chopped watermelon rind pieces to the pot. Mix well with the onion-tomato mixture.
Add the washed red lentils to the pot and stir everything together.
Pour in enough water to cover the lentils and watermelon rind. Add turmeric powder, cumin powder, coriander powder, chili powder, and salt. Stir to combine all the ingredients.
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the dal simmer for about 20-25 minutes, or until the lentils are cooked through and the watermelon rind is tender. Stir occasionally to prevent sticking and add more water if necessary to achieve your desired consistency.
Once the dal is cooked, taste and adjust the seasoning if needed.
Garnish with fresh cilantro leaves before serving.
Serve the watermelon rind dal hot with steamed rice or roti for a delicious and nutritious meal.
