CARIBBEAN FRICASSEE CHICKEN
Fricassee, originally from French cooking, introduced and modified to Caribbean cooking and specially popular in Jamaica as an alternative to Brown Stew.
The different between Fricassee and Brown Stew in Caribbean cooking lies mainly in the cooking method.
The chicken is browned slightly after being marinated in dry seasonings and herbs, sometimes flour.
It is then cooked in a tangy, often tomato based sauce, with little or no browning,
then served with less gravy.
Brown Stew on the other hand is usually marinated in browning for a darker colour, and browned more in the pan.
