I WILL TAKE YOU ON A SMALL JOURNEY OUTSIDE MY KITCHEN, INTO NATURE, LISTEN TO THE SOUNDS OF THE ISLAND, LET YOU HAVE A GLIMPSE INTO WHERE I LIVE. A TINY BEAUTIFUL ISLAND IN THE MIDDLE OF THE NORTH SEA, SHETLAND ISLANDS. THIS IS ‘HAMNAVOE’ ONE OF THE FEW ISLANDS CONNECTED BY SEA. I NEVER REALLY PLANNED TO MAKE THIS VIDEO AND THAT'S WHY ITS SHOT ON MY PHONE. I HOPE YOU ENJOY THIS TRIP AS MUCH AS I DID.
Recipe:
80gm onion chopped
250gm mussels
1tbsp butter
3 large cloves of garlic chopped
60gm chorizo chopped
50ml apple cider
50ml double cream
1/2 lime
1 spring onion sliced
If cooking outdoors, you can put the onions, butter, chorizo and garlic all in one tub to save space.
Method:
1: In a pot add the butter, onion, garlic, chorizo and cook for 5-8 minutes
2:Add your mussels and give it a mix, then add your cider, put your lid on and let it cook for 8-10 minutes until the mussels open up.
3:Add the double cream, give it a mix and let it cook for another 5-10 minutes until the sauce thickens to your desired consistency.
4:Squeeze some lime, garnish with some spring onions and serve
