📝 Ingredients:
For the puris:
• Semolina (Suji / Rava) – 1 cup
• All-purpose flour (Maida) – 1 tablespoon (optional, for extra crispiness)
• Salt – 1/4 teaspoon
• Oil – 1 teaspoon (for binding)
• Lukewarm water – for kneading
• Oil – for deep frying

🍽️ Instructions:
1. Prepare the dough:
• In a mixing bowl, combine semolina, all-purpose flour, and salt.
• Add 1 teaspoon of oil and mix.
• Gradually add lukewarm water and knead it into a firm dough (firmer than roti dough).
• Cover the dough with a damp cloth and let it rest for 30 minutes so the semolina softens.
2. Roll the puris:
• Knead the dough again for 2–3 minutes to make it smooth.
• Take small portions and roll them into small balls or roll a big sheet and cut out small round puris using a lid or cookie cutter.
• Don’t make them too thick or too thin.
3. Frying:
• Heat oil in a deep pan on medium flame.
• Once the oil is hot, gently slide the puris in and press lightly with a spoon – they will puff up.
• Fry until golden and crisp on both sides.
• Remove and place on paper towels to absorb extra oil.

✅ Tips:
• Make sure the oil is not too hot or too cold.
• Fry immediately after rolling for best puffed puris.
• Store in an airtight container after cooling – they stay crisp for a week!
