This vegan pumpkin pie cheesecake recipe is so easy to make thanks to the pre-made graham cracker crust and is absolutely delicious! I was so pleased with how it turned out -- it's my favorite vegan dessert I've made to date. It's perfect for pumpkin spice season and a vegan twist on the classic pumpkin pie. Don't forget to top with some non-dairy almond whipped cream and enjoy!
Ingredients needed:
1 9 inch store-bought graham cracker crust
1 cup canned organic pumpkin puree
1 8-ounce container of vegan cream cheese (Kite Hill, Tofutti or GoVegan brand work fine)
1 block firm tofu
1/2 cup sugar
3 1/2 tablespoons flour
1/4 teaspoon baking powder
2 1/2 teaspoons pumpkin spice blend
pinch of salt
