Old Fashioned Pinwheel Cookies
Filling
1 1/4 cups chopped dates or figs
1/2 cup sugar
1/2 cup water
1/2 cup chopped pecans
Dough
2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup soft butter
1 cup brown sugar
1 egg
1/2 teaspoon vanilla
FILLING
combine dates-sugar-water in a saucepan, bring to boil. Reduce to medium low and simmer until mixture begins to thicken, stirring occasionally.
Set filling aside to cool, after the filling is completely cool add in pecans, in the meantime prepare the dough.
DOUGH
In a bowl combine flour-baking soda-salt, set aside, In another bowl beat butter and brown sugar until fluffy, add egg and vanilla.
Gradually add the dry ingredients until combined completely roll out your dough into an even rectangle, spread your filling and roll into a tube, place in your refrigerator 2 hours to overnight, cut cookies evenly about a 1/2 inch or so and spread them out on wax paper.
Preheat oven to 350 degrees F and bake 10-12 minutes allow to cool completely.
