Beetroot hummus is a favorite for my kids simply because of the vibrant pink color coming from the beets themselves. The color comes off more vibrant if fresh beets are used instead of canned ones.
Though the name doesn’t sound appealing, we call it pink hummus, Barbie hummus, or unicorn hummus. It’s perfect to have on hand for valentines (love) day.
Ingredients:
2 cans of garbanzo beans
1 can of red beets drained (or 2 medium sized beets)
2 tbsp of Tahini
2 tbsp of Lemon (or as much as you like)
1 tsp of Salt
1/4 cup of Olive oil (or as much as you like)
Add all ingredients to a blender except the oil. Drizzle in as much oil as needed. Enjoy!
