[📝ENG Recipe] Beef Galbi-jjim (Braised Short Ribs)
1. Soak 1.5kg of beef short ribs in cold water for 1 hour to remove the blood.
2. Parboil for 5 minutes — adding half a cup of sugar helps tenderize the meat and draw out more blood.
3. Rinse the ribs well under running water.
4. Finely chop half an onion (for tenderizing) and some green onion.
5. In a measuring cup (paper cup size), mix the sauce:
5/6 cup (150ml) soy sauce
2/3 cup (120ml) mirim (cooking wine)
2/3 cup (120ml) pear juice
1 liter of water
Half a cup of sugar
The chopped onion and green onion
2 tablespoons minced garlic
A generous amount of black pepper
6. Cover the pot halfway and simmer for 1 hour.
7. For garnish, slice half a carrot into round pieces.
8. Add 5 shishito peppers and 2 chestnuts.
9. Cover and simmer for 10 more minutes.
