Peanut Til Soft Crisp Chikki

Improves Iron Deficiency in Women kids & old Age people.
Ingredients:
1 Cup - Peanuts with skin
3/4 Cup - TIL (Black or White)
1 1/4 Cup - Sugar (Brown/ White sugar)
1/2 Spoon - Ghee
Pinch of Eating Soda & Salt
Method:
Keep the Pan on a Simmer throughout the process
1. Dry roast Til until til start spluttering, take into a plate
2. Dry roast Peanuts until rawness gone.( don’t over burn peanuts else Chikki smells burnt)
3. Grind the Roasted Til & Peanuts coursely as shown in video. Keep ready.
4. Take a plate or on counter top grease with sunflower/peanut oil.
5. To Caramelise Sugar - add sugar into the pan & leave for a while, once sugar starts melting then do mix. Continue mixing sugar as it keeps caramelisation. Once all sugar resolved & single-string consistancy reached then add quickly 1/2spoon ghee, a pinch of Eating soda & salt, mix well
6. Now add the powdered peanut-til mixture.
7. Start mixing quickly as caramel turn to hard faster.
8. Mix until the powder is well absorbed into caramelised sugar.
9. Once well mixed now transfer into the oil greased plate / counter top.
10. Using spatula or roller: Roll/spread the Chikki mix until to 1/2” size or as desired.
11. While the Chikki is warm cut into slices & leave for cool down.
12. Once Chikki cooled completely, now transfer into an airtight container & store it in a dry place.
It last fresh n aromatic until 6 weeks.
