🍗 Chicken Dum Biryani – Ingredients (Serves 4)
✅ For Marinating the Chicken:
Chicken (with or without bone) – 500 g
Fried onions paste -6 medium
Yogurt – ½ cup
Ginger garlic paste – 1½ tbsp
Red chili powder – 1½ tsp
Turmeric powder – ½ tsp
Coriander powder – 1 tsp
Garam masala – 1 tsp or Biriyani masala
Lemon juice – 1 tbsp
Salt – to taste
Fresh coriander & mint leaves – a handful (chopped)
Oil – 1 tbsp
⏱️ Marinate for: 1 to 2 hours (or overnight for best flavor)
🍚 For the Rice:
Basmati rice – 2 cups (soaked for 30 mins)
Water – enough to boil rice
Whole spices:
Bay leaves – 2
Green cardamom – 4
Black cardamom – 1
Cinnamon stick – 1 small piece
Cloves – 4
Cumin seeds – 1 tsp
Salt – 1 tbsp (or to taste)
Lemon juice – 1 tbsp
Ghee – 1 tsp
⏱️ Cook rice: Only 80% (do not fully cook)
🍽️ For Layering & Dum:
Fried onions (Birista) – 1 cup
Saffron – ¼ tsp (soaked in 2 tbsp warm milk)
Ghee – 2 tbsp
Fresh mint & coriander – a handful each
Wheat dough – to seal the pot lid
🔥 For Dum Cooking:
Use a heavy-bottom pan or handi.
Spread a little ghee at the bottom, then add marinated chicken.
Layer 80% cooked rice on top.
Add fried onions, mint, coriander, saffron milk, and more ghee.
Seal the lid using wheat dough to trap steam.
Cook on low flame for 25–30 minutes.
