姊夫今天來分享一道法國的家常菜
法式白酒蘑菇奶油燉雞

Ingredients 食材
Boneless chicken leg 去骨雞腿 2 piece
Salt & pepper For Seasoning 鹽胡椒 調味
All-purpose flour 萬用麵粉 1 tsp 匙
Cooking oil 烹調用油
Unsalted butter 無鹽奶油 50 gm 公克
Potato 洋芋 1ea 顆
Onion chopped 洋蔥碎 1/4 ea 顆
Shallots chopped 紅蔥頭切碎 30 gm 公克
Button mushroom 白蘑菇 100 gm 公克
Cooking wine 白酒 2 tsp 匙
Chicken broth 雞高湯 1/2 cup 杯
Whipped cream 鮮奶油 30 ml 毫升
Parsley chopped 荷蘭芹切碎 20 gm 公克
Instructions 操作步驟
1. 清洗鍋具,餐具,工作台面,洗手。
2. 清洗所有蔬菜類食材備料,擦乾。
3. 洋芋去皮切1公分厚片,洋蔥切碎,紅蔥頭切碎,白蘑菇清理,荷蘭芹切碎備用。
4. 去骨雞腿切塊,灑鹽胡椒調味,再撒上一層薄薄的麵粉備用。
5. 燒熱一個平底鍋,加少許烹調用油,先煎洋芋厚片,煎兩面,取出備用。
6. 在煎去骨雞腿,兩面煎上色,取出備用。
7. 原鍋加奶油,炒香紅蔥頭碎,洋蔥碎,少許麵粉,白蘑菇,加白酒,煮至酒精揮發。
8. 加入高湯,煎好的去骨雞腿,洋芋,鮮奶油,煮至沸騰。
9. 最後的確認味道後,撒上荷蘭芹切碎後盛盤上桌。
1. Clean pots, cutlery, countertops, and wash your hands.
2. Wash all vegetable ingredients and dry them.
3. The potato are peeled and cut into 1 cm thick slices, the onions are chopped, the shallots are chopped, the white mushrooms are cleaned, and the parsley is chopped for use.
4. Cut the Boneless chicken leg dicing and season with salt and pepper, then sprinkle with a thin layer of flour for use.
5. Heat a pan, add a little cooking oil, first fry the thick slices of the potato, fry both sides, and remove for use.
6. Then fry the chicken legs, fry them on both sides, and take them out.
7. Add the butter to the original pot, stir-fry the shallots, onions, put a little flour, white mushrooms, add white wine, cook until the alcohol evaporates.
8. Add the stock, fry the boneless chicken legs, potatoes, whipped cream, and boil until boiled.
9. After confirming the taste, sprinkle with parsley and serve on a plate.
