Ingredients:
2 medium-sized potatoes (boiled and mashed)
1 cup besan (gram flour)
¼ cup rice flour
½ teaspoon turmeric powder
½ teaspoon red chili powder
½ teaspoon black salt (or regular salt)
½ teaspoon chaat masala
½ teaspoon garam masala
1 tablespoon oil (for the dough)
Oil for deep frying
Water (as needed)
Instructions:
Prepare the Dough:
In a mixing bowl, combine mashed potatoes, besan, rice flour, turmeric, red chili powder, black salt, chaat masala, ajwain, garam masala, and 1 tablespoon oil.
Mix well and knead into a soft, non-sticky dough. If needed, add a little water.
Prepare for Frying:
Heat oil in a deep pan over medium heat.
Grease a sev maker (chakli press) with oil and use the fine-holed sev plate.
Make the Bhujia:
Fill the sev maker with the dough and press it directly into the hot oil.
Fry on medium heat until golden and crisp.
Flip occasionally for even cooking.
Drain and Store:
Remove the fried bhujia using a slotted spoon and place on paper towels.
Let it cool completely before storing in an airtight container.
