This restaurant quality seared scallops dish with a mouthwatering pea puree comes together so fast, you’ll wonder why you were ordering out in the first place! This is a super easy seared scallop recipe that even the most novice cooks can totally handle with ease!

INGREDIENTS
• large scallops, patted dry
• salt & pepper
• 2-3 tbsp olive oil

Gremolata
• small bunch fresh parsley
• zest from one lemon
• 1 shallot finely minced

Pea Puree
• 3 oz diced pancetta
• 2 cups frozen sweet peas
• 1 shallot finely minced
• 5-10 garlic gloves, minced
• 2 tbsp white wine
• 1 tbsp roasted garlic bouillon paste
• ½ tbsp butter
• splash of low sodium chicken stock/broth
