🧾 Ingredients (for 1 large braid / about 12 servings)
Dough:
625 g all-purpose flour
250 ml lukewarm milk
40 g fresh yeast
100 g sugar
1 egg
100 g soft butter
7 g salt
1 egg for brushing
Filling:
400 g ground almonds or other nuts
180–200 g sugar
1 packet vanilla sugar
1 tsp cinnamon (optional)
200 ml milk
80 g butter
2 tbsp honey
1–2 tbsp breadcrumbs
1–2 tbsp rum or almond extract
Optional: lemon zest
Glaze:
150 g powdered sugar
2–3 tbsp milk or lemon juice
👩🍳 Instructions
Melt the butter, add the milk – the mixture should be lukewarm. Crumble in the yeast and dissolve completely.
Place the flour in a large bowl, add sugar, egg, and the butter-milk-yeast mixture. Knead until smooth and elastic. Add salt at the end.
Cover the dough and let it rest for 30 minutes, then press down and let it rest another 20 minutes.
For the filling: warm the milk with sugar, vanilla sugar, and honey. Add butter and let it melt. Stir in nuts/almonds, optionally add rum or cinnamon. Let it cool slightly.
Roll the dough on a floured surface to about 0.5–1 cm thick. Spread the nut filling evenly over the dough.
Roll up the dough, cut it lengthwise, and twist the two strands into a braid with the cut side facing up.
Place on a baking sheet and let it rest another 20 minutes. Brush with beaten egg.
Bake in a preheated oven at 160 °C / 320 °F (top/bottom heat) for 35–40 minutes until golden brown.
Let cool completely, then brush with a glaze made from powdered sugar and milk or lemon juice.
