This dish is one that my mom used to make using her electric skillet while sitting in her wheelchair at the kitchen at the table with some help from my dad who would cook the penne and broccoli on the stove. I think she got the recipe from my sister Anna and added her own twist. It is so simple, broccoli, tomatoes, onion, garlic, olive oil and penne pasta all made so lovingly by my mom with some help from my dad. It was the last meal that she and I made together and it is special to me, but it is also so simple and delicious and so I am sharing it with you. Buon appetito!
