Smothered Chicken & Rice Recipe-
Prepare rice according to package directions.
Cut 2 large chicken breasts into cubes, cook in frying pan with a little olive oil. Set to side.
Add heaping tablespoon minced garlic, one 16 oz carton of heavy whipping cream, 1 cup fresh parmesan cheese or powdered parmesan cheese is fine too.
Mix in 3-4 cups of fresh spinach leaves, and one cup of milk. Stir together over medium-low heat until sauce starts to thicken and spinach is cooked down (approx. 10 minutes). Sauce will be bubbling.
*Add a tbs of flour if sauce is not thickening.
Season to taste. I use salt, pepper, paprika, and Kinder's Buttery Steakhouse seasoning.
Simmer until all ingredients are combined and sauce has thickened slightly.
Serve chicken and sauce over rice.
