Recipe vegan Swiss meringue macarons
86 gram almond flour
86 gram powdered sugar
75 gram aquafaba straight from the can, reduced will work too )
85 gram granulated sugar
1/4 teaspoon cream of tartar
1 drop of vegan pink food color
Heat the sugar and the aquafaba together in a bowl with a warm water bath, slowly heat up the water bath ( au bain Marie ) when it reaches 45 degrees stop right away and start mixing. You can add the food color in this mixture as well.
Add the cream of tartar to the Aquafaba sugar mixture and mix ( this can also be the moment to add a drop of food color ) till the meringue has very stiff peaks. This will take some time.
put in the almond mixture and use a spatula to macaronage, slowly fold and fold till the substance has the consistency of lava. Whatch my other video to see the consistency.
