Can I Beat Dark Souls 3 If I Can Barely Even Move? (Infinite Stone Flesh Challenge)

Dark Souls 3, but I modded the Stone Flesh weapon art from Havel's Greatshield to never run out. Meaning I'm permanently encased in stone, causing me to slow-walk and fat roll. On top of that I will not wear any armor underneath it nor use a shield to block anything. Meaning that this tank-build might not be so tanky after all...
