Chocolate Burnt Cheesecake

Ingredients
250g cream cheese
2 eggs
85g caster sugar
150ml whipping cream
6g plain flour
A pinch of salt
1/2 tsp vanilla essence
5g Cocoa powder
100g dark chocolate

Method
1. Melt dark chocolate using microwave or double boiler. Stir to melt completely, then set aside.
2. Preheat oven to 220c. Line a 6” round cake pan with baking paper.
3.Whisk cream cheese until smooth then add in sugar. Whisk together until smooth and creamy. Add the eggs, 1 at a time, whisking well after each addition. Once combine, pour in the cool down melted dark chocolate. Stir to combine. Then whisk in the whipping cream, & vanilla essence.
4.After that, sift in flour, salt & cocoa powder. Whisk until fully combine.
5.Pour the cheesecake batter into the prepared pan and tap the pan gently on a flat surface to remove any air bubbles.
6.Bake for 20-30 minutes or until the top is dark brown, and cake is set but with a slight wobble in the centre. Remove from the oven and leave to cool completely before let it rest in the fridge for atleast 4 hour or overnight. After resting in the fridge, removing it from the pan.
