Mark shares his passion for permaculture farming, showing how he cultivates rice, bananas, ground provisions, herbs, and peppers using fully organic, sustainable methods. You’ll even see his farm-raised conchs and learn about the natural fertilizers that help keep his crops thriving.

After an immersive tour of the land, the journey continues to La Belle Vie, Mark’s beachfront property overlooking the Caribbean Sea. There, Chef Jerome prepares an authentic Trini-style meal featuring Moruga Hill Rice, bhagi, stewed chicken, stew pork, peas, plantain, and avocado — all bursting with local flavor.

Special guest Onika Cooper, known online for her creative home cooking, joins in to make steamed king fish wrapped in fig leaves — a true taste of coastal living. The day ends with a surprise performance from Peter “The Parang Boss” and his guitarist friend, who bring that unmistakable Trini parang vibe to the lime.
