But today, it occupies less than 1% of the world's grain production. Why? Because we chose Fluffiness over Survival.
This is Rye. The grain that built the Vikings and sustained the Middle Ages, only to be abandoned for the luxury of white wheat bread.
THE WINTER KING While wheat is a diva that needs perfect soil and mild weather, Rye is a beast. It grows in acidic soil, fights its own weeds, and actually prefers the cold. It is the most resilient grain in the Northern Hemisphere.
THE WHITE BREAD TRAP We abandoned Rye because it makes dark, dense bread. We wanted the light, airy texture of wheat. But in doing so, we built a food system that collapses whenever the weather gets extreme. We traded security for a sandwich.
THE REVIVAL As climate change brings unpredictable winters and poorer soils, the "Weed of the North" is looking like a genius solution. It’s time to rediscover the grain that never gave up on us.
