classic Italian Ladyfinger Biscuits (Savoiardi)
🧾 Ingredients
Eggs – 2 large (room temperature)
Granulated sugar – ¾ cup (150 g)
All-purpose flour (maida) – ¾ cup (90 g)
Vanilla essence – 1 tsp (optional)
Powdered sugar – for dusting
Preheat oven to 180°C
Line a tray with butter paper
Fit a piping bag (or zip-lock with corner cut)
2️⃣ Separate eggs
Separate egg whites and yolks carefully.
3️⃣ Whip egg whites
Beat egg whites until soft peaks
Beat until stiff, glossy peaks
4️⃣ Whip egg yolks
Beat yolks with sugar
Beat until pale & thick
Add vanilla
5️⃣ Combine gently
Fold yolk mixture into egg whites slowly
Sift flour + cornflour together
Fold into batter using cut & fold motion Don’t overmix
6️⃣ Piping
Pipe finger-shaped strips (3–4 inches long)
Leave space between each
Dust generously with powdered sugar
7️⃣ Bake
Bake at 180°C for 12–15 minutes
Tops should be lightly golden
Cool completely before using
