Ingredients for Spicy Crispy Chicken Fry:
(Tsp-Teaspoon; Tbsp-Tablespoon)
Boneless Chicken - 300 gms (cut into small pieces)
Masala powder:
Black peppercorns-1/2 tsp
Coriander seeds- 1.5 tsp
Cumin seds- 1/2 tsp
Star anise-1/2
Green cardamom-2
Black cardamom-1 small
Cinnamon- 2 small
Kashmiri Chilli Powder- 2 tsp
(Use 3 tsp of this masala powder in the marinade)
Marination:
Turmeric powder - 1/4 tsp
Red Chilli powder -1/2 tsp
Masala powder-3 tsp
Ginger garlic paste-1.5 tsp
Lemon juice-1/2 small lemon
Green chillies -4-5 whole
Curry leaves-15 nos
Coriander leaves chopped-2 tbsp
Salt -1/2 tsp + pinch
Egg white - small
All purpose flour (Maida)- 1 tbsp
Corn flour/starch- 3.5 tbsp
Other Ingredients:
Oil for deep frying
Preparation:
Add all the items for the Masala powder into a grinder and grind it to a powder.
Cut the chicken breast fillets into small bite sized pieces.
Chop the coriander leaves and take out the curry leaves.
Marinate the chicken pieces with the items mentioned and set aside for around 30 mins.
Process:
Heat oil in a pan/kadhai to deep fry the marinated chicken pieces.
Drop the chicken pieces (along with the curry leaves, green chillies and coriander leaves) side by side to not crowd the pan and do not stir for a minute.
Now stir and fry on medium heat for around 4-5 mins till browned and crisp.
Fry the rest in batches.
Remove and serve hot as a snack or side dish with rice.
