How to make black rice cake at home (怎么做蒸黑米糕)
Here we show you how to make black rice cake at home.
Ingredients:
3/4 cup (105g) black rice flour
1/3 cup (45g) sticky rice flour
1/4 cup (30g) sweet rice flour
5 tbsp (75g) sugar
1 cup (210mL) milk (adjust depending on texture)
5 eggs
1 tbsp + 1 tsp (20 mL) avocado oil (or any other relatively flavorless oil)
1. First, crack the eggs into a bowl;
2. Separate the egg yolks from the egg whites;
3. Add milk and oil to the yolks and mix thoroughly;
4. Sift the three different rice flours together, and make sure to do it twice to eliminate any clumps;
5. Add the flour mix to the yolk mixture that we just made, then mix thoroughly;
6. Beat the egg whites using medium speed after adding a bit of vinegar in;
7. Once there are bubbles in the egg white mixture, add 1/3 of the sugar in each time and mix thoroughly;
8. Keep mixing until the egg whites form a soft peak;
9. Thoroughly stir in 1/3 of the egg white mixture into the rice flour batter, and repeat one time;
10. Then add the entire batter into the remaining egg white mixture and mix thoroughly;
11. Place parchment paper on the baking pan, pour the batter into the baking pan. Tap the pan a couple of times to get rid of any air bubbles and smooth out the top of the mixture;
12. Cover with two layers of plastic wrap, place the pan into a pot with boiling water, and steam the batter for 50 minutes on medium heat;
13. Immediately take the cake out of the pan and peel the parchment paper off;
14. You can now enjoy the cake!
