Here’s a simple recipe for making Nutri Aloo Ki Sabji:
Nutri Aloo Ki Sabji Recipe
Ingredients:
1 cup Nutri (textured soy protein)
2 large potatoes (aloo), peeled and diced
2 tablespoons oil (preferably mustard oil or vegetable oil)
1 teaspoon cumin seeds
1 teaspoon mustard seeds (optional)
1 onion, finely chopped
2 green chilies, slit (or to taste)
1 teaspoon ginger-garlic paste
2 medium tomatoes, chopped
1 teaspoon turmeric powder
1 teaspoon red chili powder (or to taste)
1 teaspoon coriander powder
Salt to taste
Fresh coriander leaves for garnish
Instructions:
1. Prepare Nutri:
Soak the Nutri in warm water for about 15-20 minutes until they become soft. Drain and squeeze out the excess water. Set aside.
2. Cook Potatoes:
In a pan, heat 1 tablespoon of oil. Add the diced potatoes and sauté them until they are slightly golden and cooked through. Remove them from the pan and set aside.
3. Make the Masala:
In the same pan, add the remaining oil. Add cumin seeds and mustard seeds (if using) and let them splutter.
Add the chopped onions and green chilies. Sauté until the onions become translucent.
Stir in the ginger-garlic paste and cook for a minute until the raw smell disappears.
4. Add Tomatoes and Spices:
Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes become soft and the oil starts to separate from the masala.
5. Combine Everything:
Add the soaked Nutri and sauté for a couple of minutes. Then, add the sautéed potatoes and mix everything well.
Cook for about 5-7 minutes on low heat, allowing the flavors to meld. If the mixture is too dry, you can add a splash of water.
6. Garnish and Serve:
Once done, turn off the heat and garnish with fresh coriander leaves. Serve hot with rotis, parathas, or rice.
