This week, Bucky Beeman visited Chef Justin Schoville at Yuma Fritas located at 808 Broadway Avenue South in Soldiers Field Plaza, Rochester MN in the former Taco Jed space.
Yuma Fritas is a new Cuban-inspired street food concept from Championship Dining, led by Chef
Justin Schoville and Lindsay Zubay. The eatery specializes in Cubanish fare celebrating Cuban street flavors with creative twists. Menu highlights include the frita burger with chorizo, beef, chicken, or fish on an egg bun with shoestring potatoes, traditional Cuban sandwiches and a plant-based version, sides like fried plantains, coconut-ginger rice, malanga fritters, and tropical batidos plus a full cocktail bar. Instead of fountain sodas, they offer imported bottled Coca-Cola and Fanta made with cane sugar.
The concept grew out of Chef Schoville’s discovery of the frita burger in Miami and his desire to bring Cuban street flavors to Rochester creatively. The name Yuma comes from Cuban slang for foreigners or Americans, acknowledging they are exploring Cuban-inspired food without claiming Cuban heritage. The team chose the former Taco Jed space in Soldiers Field Plaza for its visibility and access.
The restaurant plans to open in mid-December, operating seven days a week with about 20 to 30 staff.
