Ingredients (with measurements)
Spinach (Palak) – 500 gm
Green peas (Matar) – 250 gm
Tomato – 2 medium
Green chillies – 4–5
Onion – 2 medium (finely chopped)
Ginger garlic paste – 1 tbsp
Black cardamom – 1
Cumin seeds – 1 tsp
Cinnamon – 1 small piece
Turmeric powder – ½ tsp
Red chilli powder – 1 tsp
Coriander powder – 1 tsp
Salt – as per taste
Oil – 2–3 tbsp
Water – as required
Recipe Steps
Step 1: Blanch Spinach
1. Wash 500 gm spinach thoroughly.
2. Boil water, add spinach, and blanch for 2–3 minutes.
3. Transfer immediately to cold water.
4. Make a smooth palak paste and keep aside.
Step 2: Boil Green Peas
1. Boil 250 gm green peas with water and salt until soft.
2. Drain and keep aside.
Step 3: Prepare Masala Paste
1. Boil 2 tomatoes, 4–5 green chillies, 1 black cardamom, 1 tsp cumin seeds, and 1 small cinnamon stick.
2. Cool and grind into a smooth paste.
Step 4: Tadka & Cooking
1. Heat oil in a pan.
2. Add chopped onion and sauté till golden.
3. Add ginger garlic paste, cook till raw smell goes.
4. Add turmeric powder, red chilli powder, coriander powder and mix well.
5. Add boiled tomato masala paste and cook till oil separates.
6. Add boiled green peas, mix well.
7. Add palak paste, salt, and required water.
8. Simmer for 5–7 minutes.
Step 5: Serve
Serve hot with roti, naan, or jeera rice
