Dragon Boat Festival is a traditional Chinese holiday on the fifth day of the fifth month in Chinese lunar calendar. Dragon boat racing and eating Zongzi (rice dumpling) are traditional rituals on this day.
The “Dragon Boat” is inspired by to and to celebrate this festival. The cake is combined with a layer of almond lemon dacquoise, freeze dried strawberry crumbles, a light lemon bavarois and a red fruits compote. All decorations are crafted with chocolate.
