✨ Golden Cream Dumplings | Fusion Series | Crispy Kozhukkatta x Rasmalai Fusion Dessert ✨
Welcome to the Fusion Series!
Today, I’m bringing a brand-new creation — Golden Cream Dumplings — crispy rice flour dumplings dropped into a chilled saffron–condensed milk cream.
It’s inspired by Kerala’s pal kozhukkatta and the royal rasmalai — a melt-in-mouth fusion dessert that’s festive, rich, and totally unique.

🥣 Ingredients
For Dumpling Batter:
Rice flour – ½ cup
Maida – ¼ cup
Milk powder – 2 tbsp
Egg – 1 (small/medium)
Milk – ½ cup (adjust)
Powdered sugar – 3 tbsp
Ghee – 1 tsp
Baking soda / Eno – a pinch (before frying)
Cardamom powder – ¼ tsp
Oil – for frying
For Saffron–Condensed Milk Cream:
Full-fat milk – 1½ cups
Condensed milk – 3 tbsp
Fresh cream – ¼ cup
Sugar – 1 tbsp (optional)
Saffron – 8–10 strands (soaked in warm milk)
Cardamom powder – ¼ tsp
Pinch of salt
Garnish:
Crushed pistachios
Dried rose petals

👩🍳 Preparation
1️⃣ Cream
Simmer milk until slightly thick.
Add condensed milk, saffron milk, cardamom, and salt.
Mix in fresh cream, cook 2 mins, taste for sweetness.
Chill for 1 hour.
2️⃣ Dumpling Batter
Mix dry ingredients: rice flour, maida, milk powder, sugar, and cardamom.
Add egg, milk, and ghee → make a thick pouring batter.
Rest 15 mins, then add baking soda/Eno.
3️⃣ Frying
Drop spoonfuls of batter into medium-hot oil.
Fry till golden and puffed. Drain.
4️⃣ Assembly
Pour chilled saffron cream in a bowl.
Add warm dumplings.
Garnish with pistachios and rose petals.
Serve immediately.

💛 Notes
For a softer texture, dip dumplings in warm milk before adding to cream.
For crispy contrast, serve directly over chilled cream.
