I worked all day on this special meal for my daughter’s 10th birthday! 💕 It truly was a labor of love. I can’t believe how quickly she’s growing, and celebrating each milestone with her means the world to me.

🍗Crispy Baked Chicken Drumsticks

These crispy oven-baked chicken drumsticks are so easy, buttery, and full of flavor! Perfect for weeknight dinners or special occasions. The crumb coating gives the chicken the most delicious crunch without frying.

Ingredients:
• 1 cup fine cornflake crumbs (or pretzel crumbs)
• 1 cup crushed crackers (Ritz work great)
• 1 tsp salt
• ½ tsp garlic powder
• ½ tsp smoked paprika
• ½ tsp Cajun seasoning
• ½ tsp baking powder
• ¼ tsp black pepper
• ¾ cup (1 ½ sticks) butter, melted
• 8 chicken drumsticks (skin on)

Instructions:
1. Preheat oven to 425°F and place the rack in the middle. Line a baking sheet with foil and set a baking rack on top.
2. Mix the crumbs, crushed crackers, salt, garlic powder, smoked paprika, Cajun seasoning, baking powder, and pepper.
3. Melt the butter in a separate bowl.
4. Dip each drumstick in the melted butter, then roll in the crumb mixture.
5. Place on the rack and lightly spray with oil.
6. Before baking, drizzle any leftover melted butter over the drumsticks.
7. Bake for 25 minutes, flip, then bake another 15–20 minutes until golden and cooked through (internal temp 170°F).
