In a medium saucepan, boil 4oz of egg noodles in salted water. Once done, drain. In a saute pan, saute 1/2 of a chopped onion and 8oz of chopped mushrooms in 1 teaspoon of olive oil. Once the onions are transparent, add 1 minced garlic clove, 1/2 teaspoon of paprika, 1/4 teaspoon of mustard, 1/4 teaspoon of salt and 1/8 teaspoon of pepper. Mix the spices in before adding 1/2 cup of beef stock. Lastly, pour in 1 tablespoon of lemon juice and 1/2 cup of sour cream. Mix well and remove from the heat. Serve over the egg noodles.
