For those who’ve followed my journey, you know Anthony Bourdain was more than just a chef or a host—he was my hero. He inspired me to travel, to eat fearlessly, and to connect with people over food. So when I found out that Aling Lucing, the legendary eatery that reinvented sisig, was just a drive away from where we live in Angeles City, Pampanga, I knew I had to go.
This is Bucket List Stop #31—and I didn’t go alone.
Join me, Ding, her sister Foxy Oxy, and the one and only Mini Me, as we pile into a borrowed golf cart and head straight to the humble little carinderia that made Filipino pork sisig famous—not just in the Philippines, but across the globe. This is the same sizzling pork dish that Anthony Bourdain fell in love with, the same one he called "perfect with a cold beer" in his now-iconic visit to Pampanga.
We didn’t get access to the kitchen. We didn’t get the perfect shots. Honestly, it was a bit chaotic, like most of our life here in the Philippines. But we’re keeping it real. This video captures exactly what it’s like to visit Aling Lucing in 2025. The people, the atmosphere, the history, the food—and yes, the imperfections. We even had a jeepney full of our stuff because, yeah... we’re still moving!
In this video:
We talk about the origins of sisig, a once-humble Kapampangan dish made from parts of the pig’s head.
We walk through the local legend of Lucia “Aling Lucing” Cunanan, who took a sour roadside snack and transformed it into the sizzling plate that made Pampanga the “Sisig Capital of the Philippines.”
We remember Bourdain’s visit, how he spotlighted this hole-in-the-wall and changed everything for Filipino cuisine.
We reflect on the tragedy of Lucia’s death—and the complicated legacy she left behind.
And we give you our raw, unscripted, unfiltered reaction to the food itself.
If you’ve ever wondered:
“Where did sisig come from?”
“What Filipino food did Anthony Bourdain love?”
“Is Aling Lucing worth the hype in 2025?”
—then this is the video for you.
📍 Angeles City is a place rich with history, Kapampangan culture, and yes—unfiltered flavor. Whether you're an expat living in the Philippines, planning your retirement in Pampanga, or just looking for your next Filipina food adventure, this one's for you.
