Puff patties" generally refers to savory, stuffed pastries made with flaky puff pastry dough. While they are traditionally baked, they can also be made by frying or air frying for a crispy finish, often when an oven is unavailable.
Method for Frying Puff Patties
You can use store-bought (e.g., Pepperidge Farm) or homemade puff pastry. The key to success is keeping the dough and filling cold before frying.
Ingredients
Puff pastry sheets
Filling: Common fillings include spiced potatoes (aloo), chicken, mixed vegetables, paneer, or minced meat. Ensure the filling is pre-cooked and completely cooled to prevent the dough from getting soggy.
Oil: Vegetable oil for deep frying.
Water or egg wash: For sealing the edges.
Instructions
Prepare the filling and let it cool completely.
Cut the pastry: Roll out the puff pastry sheet to about 1/4 inch thickness and cut it into equal-sized squares or circles.
Assemble the patties: Place a spoonful of the cooled filling in the center of each pastry piece. Fold the dough over to create a half-moon or triangle shape.
Seal the edges: Use a little water on the edges to help seal, then press down firmly with your fingers or a fork to ensure they are sealed tightly. This prevents the filling from coming out during frying.
Heat the oil: In a deep pot or kadai, heat vegetable oil to around 350°F (175°C) over medium heat.
Fry the patties: Gently place a few patties into the hot oil in batches, making sure not to overcrowd the pot. Fry for 1-2 minutes on each side, flipping occasionally, until they are golden brown and puffed up.
Drain and serve: Remove the fried patties with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
Serve hot with your favorite chutney, ketchup, or dipping sauce.
Alternative Cooking Methods
Air Fryer: Place the prepared patties in a preheated air fryer basket at around 350°F (175°C), then increase the temperature to 400°F (200°C) towards the end, cooking for a total of 10-15 minutes or until golden and crispy.
Baking: Place patties on a parchment-lined baking sheet, brush with an egg wash for a golden finish, and bake in a preheated oven at 400°F (200°C) for 20-30 minutes, or until puffed and golden.
