How to preserve home grown chillies (birds eye) if its more! Best is to pluck them from plant, let it become red. Remove its stem and let it dry in the sun. This takes 1 month because these chillies take time to dry. Some people to dry it soon make a cut in between so that the moisture in them dries soon. But still this hard work and when it dries well grind it finely and use them in your cooking. This chilli powder is very nice and is very hot.
Its 1/3rd ts is equal to 1 ½ ts pk chilli powder which is available in stores. A very important thing to keep in mind is to let them dry well if tis not dry and you grind them then it will get fungus. So grind them when dried, rest it for 15 mins as it will have moisture when grinded and then close it in a bottle
Other method to use chillies! Remove the stems from the chillies. Crush them in a chopper and spread on a baking tray which is covered with cling wrap/glad wrap/ plastic cover.
Make cubes how much ever you think is need for one time cooking and freeze. Next day morning, take out the chillies freeze and break into cubes. Before it melts, keep it in flip bag and freeze/ you can keep it in container. When you want to make curry add 1 cube/ ½ cube you need not add chilli powder.
This method is not only for chillies you can keep garlic ginger same way
When the chillies burn your hand wash your hands 2-3 times with dishwashing liquid/ wash with aata/flour/ washing your hands with toothpaste 2-3 times will give relief from chilies 99%. Use silvazine, its a hospital grade medicine its available in shops easily but whenever you find it from anywhere definitely keep in your kitchen. This is actually used on burns in hospitals. When you burn your hand with hot oil/ hot water apply this on your hand. Keep it away from clothes as it will leave stain
