Here’s a simple Bharwa Bhindi (Stuffed Okra/Bhendi Masala) recipe you can try:
Ingredients
250 g tender bhindi (okra)
2 tbsp oil (mustard oil works best)
1 medium onion (finely chopped, optional)
1 tsp cumin seeds
Salt to taste
For Stuffing Masala:
2 tbsp besan (gram flour) – dry roasted lightly
1 ½ tsp coriander powder
1 tsp cumin powder
1 tsp fennel (saunf) powder
½ tsp turmeric powder
1 tsp red chilli powder
½ tsp garam masala
½ tsp amchur (dry mango powder) or a little lemon juice
Salt to taste
1–2 tsp oil (to bind the masala)
Method
Prepare Bhindi:
Wash bhindi and dry completely with a cloth (moisture makes it slimy).
Cut off the crown and make a vertical slit lengthwise without cutting into two pieces.
Make Stuffing:
In a bowl, mix all the dry masala powders, roasted besan, salt, and a little oil.
The oil helps the masala stick inside bhindi.
Stuff the Bhindi:
Gently open each bhindi slit and stuff a little masala mixture inside.
Repeat for all.
Cook:
Heat 2 tbsp oil in a wide pan. Add cumin seeds, let splutter.
Place stuffed bhindi in a single layer. Cook on low flame, cover and let it soften.
Turn occasionally so it cooks evenly without breaking.
If using onion, you can add chopped onion before putting bhindi, sauté a bit, then add bhindi.
Finish:
Once bhindi is cooked and slightly crisp, sprinkle leftover masala (if any).
Turn off flame, rest 2 minutes, then serve.
