1. Go to Lon Lon Ranch, and Learn Epona's song as child
2. Go to Temple of Time, and get the Master Sword. Where you'll become an adult
3. Return to Lon Lon Ranch as adult
4. Talk to Ingo, and pay 10 rupees
5. Run to Epona, and she'll get scared and run away
6. Play Epona's song, and ride Epona until 1 minute is up
7. Talk Ingo, and pay another 10 rupees
8. Play Epona's song, get on Epona, talk to Ingo, and he'll challenge you to race
9. Win the horse, and Ingo will challenge you into another race. Where if you win, he'll let you keep Epona
10. Win the 2nd race, and Ingo will let you keep Epona. But, he'll lock the gate where you can't escape. To escape, you need to jump over a fence while riding Epona
And that's it, Epona is yours
Note: If you haven't learned Epona's song, you'll need to beat Forest Temple, go back to Temple of Time, place the master sword back to return as a child, and go to Lon Lon Ranch and learn the song
