ingredients
for ada
red raw rice -1 cup
water - very less
milk -2 l
water -11/2 glass
sugar -8 tbsp
salt-one pinch
Method
Soak 1 cup of red raw rice/payasam rice overnight. For 2 liter milk we need to take 1 cup of rice. We need to grind this rice with little water. It should be a thick batter. now either on banana leaf or baking sheet . cut the banana leaf into small pieces. Take the string of the banana leaf and keep it aside. Just pour the batter in a random manner on the back side of the banana leaf. You can add drops of water to make the batter to a pouring consistency. Now roll the banana leaf slowly and tie it with the string/thread that we kept aside.
Take a good quality butter paper and pour the batter on the butter paper. Roll it and tie it the same way as the banana leaf.
Now we need to steam the banana leaf/butter paper. It will take around 12 mins to be steamed. Allow it to cool down. Open the banana leaf. The ada would have cooked well. Remove it from the banana leaf. Put the cooked rice sheet into cold water. Repeat the process for everything. Wash the sheets for 4 to 5 times. Now slice the sheets into small pieces and put it in the water.
Now we can use it to the pink reduced milk.
Take a 8 liter cooker. Add 2l milk and 1 ½ glass water. The washer should be tight. Always take a deep cooker. Add the sugar. Mix well. Allow it to boil. Now close the lid and put the whistle. On low flame or 1 hour it should be cooked. After 1 hour when the pressure releases you can open it. Now in an another pot remove the pink milk and reduce it further. Remove the ada from the water and add it to the milk. Stir occasionally. Add a pinch of salt. Check the sugar. Allow it to thicken. Then you can switch off the flame. Serve the payasam hot.
