Slow Cooked Bison Roast (Crock Pot Recipe) with Veggies (Onions/Carrots/Potatoes/Peppers/Garlic)

This was about a 3lb Bison Roast (that included a portion of bone).
Add 2 cups of water and a French Onion Soup Mix to the crock pot; add the Bison roast and cook for several hours.
After about 5 hours; I took the bone out and then chopped and added the veggies. Add whatever veggies you like. it's your roast.
I did add a whole bulb of Garlic though; only slicing off the bottom and adding a bit of oil into the cloves then placed it on top of the rest of the veggies to roast/steam.
Remove the garlic after a few hours.
The Veggies are ready after about 2 hours.
Remove some of the broth to a bowl and squeeze out some of the garlic and mix (to drizzle over the roast/veggies once you plate it.
