Soft pistachio sponge layers filled with tangy raspberry confit and a light, creamy frosting. The balance of nutty pistachio and fruity raspberry makes this cake refreshing yet rich — perfect for special occasions or when you just want to impress your guests.
For the Cake Batter:
5 eggs (category C-0 — this is important!)
160 g sugar
Whisk together until fluffy.
Reduce speed and add:
30 ml sunflower oil
2 tsp pistachio paste
Sift in:
160–180 g flour
7 g baking powder
Mix gently, pour into a pan, and bake at 160–170°C for 35–40 minutes.
For Raspberry Confit:
300 g raspberries
80 g sugar
20 g cornstarch
Cook until thickened and let cool.
For the Cream:
250 g butter
80 g powdered sugar (beat until white and fluffy)
Add 250 g cream cheese and 2 tbsp condensed milk
Beat for 1 minute.
For the syrup:
100ml water
2tbsp condensed milk
