Nothing beats a herby cashew cream cheese. This recipe is vegan, soy and dairy-free and full of flavor. Spread on toast , crackers in your favorite pasta dish. This version is easy to make and part of my 5 minute recipe series here on youtube. Want more like it?

Easy vegan cream cheese
🌿 RECIPES
INGREDIENTS
2 c raw cashews, soaked
1 tbsp lemon juice
1/4 c unsweetened non-dairy yogurt
1/2 tbsp apple cider vinegar
2 tbsp nutritional yeast
1/2 tsp salt
1 large clove of garlic
Spices and spices(optional):
Jalapeno and chives
Sun-dried tomato and basil
Thyme, dill and paprika
Vanilla extract and powdered sugar
INSTRUCTIONS
Start by soaking your cashews in the apple cider vinegar overnight. This allows the flavors to absorb into your cashews and enhance the flavor of your spread. If you are in a pinch for time simply add boiling water over cashews and soak for 30 minutes to an hour.
Drain the cashews and add them to a food processor with lemon juice, dairy free yogurt, apple cider vinegar, salt, garlic and nutritional yeast.
Blend until smooth, stopping to scrape the sides as needed.
Next Mix in the chives and chopped jalapeno or any of your prefered herbs or spices.
Transfer to a serving dish or or jar and refrigerator to chill and thicken.
🤙Pro tip: I like to leave mine to chill for 24 hours to let the flavors meld together.
You will need a food processor. You could probably use a high powered blender in a pinch, but you may need to add more liquid to get it smooth.
