INGREDIENTS:
• Walnuts 3/4 cup (84g)
• Rolled oats 1/2 cup (56g)
• Dried apricots 3/4 cup (84g)
• Dried cranberries 1/2 cup (56g)
• White chocolate 3 oz (84g)
• Dark chocolate2 oz (56g)
• Coconut oil (or olive oil) 1 tablespoon
STEP-BY-STEP INSTRUCTIONS
1. Toast the Nuts & Oats
– In a dry skillet, toast walnuts for 3–4 minutes until fragrant. Set aside.
– In the same pan, toast rolled oats over low heat for 2–3 minutes.
– Let both cool, then blend the oats into a fine flour using a blender or food processor.
2. Prep the Dried Fruit
– Soak dried apricots and cranberries separately in 1 tablespoon of water each for 10–15 minutes.
– Drain and pat dry with a paper towel.
– Chop apricots into small pieces.
3. Blend the Mixture
– In a blender, pulse the toasted walnuts until crumbly.
– Add the chopped apricots, cranberries, and oat flour.
– Blend until the mixture is sticky and holds together.
4. Shape the Bites
– Roll the mixture into 1/2-inch balls (about 15mm). Use a tablespoon for consistent sizing.
– Place each ball on a parchment-lined tray.
5. Melt the Chocolate
– Melt 2 oz white chocolate in a bowl over simmering water.
– Once melted, stir in 1 oz of unmelted white chocolate chunks for texture.
– Mix in 1 tablespoon of coconut oil to keep it smooth.
– In a separate bowl, melt 2 oz dark chocolate over simmering water.
(Heat to around 105–115°F or 40–45°C for best results.)
6. Coat & Decorate
– Dip each bite into the melted white chocolate, coating the bottom or the whole bite—your choice!
– Use a pastry bag or a spoon to drizzle with dark chocolate on top.

7. Chill & Serve
– Refrigerate the bites for 1–2 hours until the chocolate sets.
