The weekend is here and I think you ought to try this recipe out!
Soak 4 kgs of rice in water
Wash and marinate chicken with turneric powder, you may add chilly powder and salt as well.
Heat oil
Add Whole spices - bay leaf, pepper, clove, cinnamon, mace, star anise, jeera and cardamom
Add 4 to 5 onions cut in half and then slices and fry till it starts to brown
Add 3 to 4 tomatoes chopped and saute
Add and adjust salt to taste
Add 2tbsp on ginger garlic paste and saute well
Add one cup of corriander leaves
Add one cup of mint leaves and fry well
Add 6 to 8 green chillies slit in half based on your spice tolerance
Add masala powders
1 tsp turmeric
3 tbsps of chilli powder
2 tbsps of cumin powder
1 tbsp of corriander powder
1 tsp of garam masala - optional
Once the contents start releasing oil add 500 ml of yoghurt/curd and saute well
Add marinated chicken to the vessel and fry everything well.
Check and adjust salt
Add water in 1:2 ratio, if you are adding 1 cup of rice add 2 cups of water
250 to 300 gms of biryani masala
Add the soaked rice to the vessel and mix well
Cook on medium to high flame for 10 mins
When it starts to boil check taste and adjust salt and any masalas if needed
Put it on dum on low flame for 10 to 15 mins
Open lid and add 3/4 tbsps of ghee
Add fried onions on top (optional)
