Easy Pressure Cooker Yogurt

1/2 - 1 gallon yogurt in the pressure cooker - use pressure cooker yougurt button. Push until it says "boil". When cycle has finished, make sure temperature has reached 180 degrees. If not, use saute mode until it does. Remove pot on to counter and let cool until between 105 and 110 degrees. Add 1/4 cup live culture yogurt if using 1/2 gallon of milk or 1/2 cup of yogurt for a full gallon of milk. Return pot to pressure cooker and press yogurt button until it has a time. I like to run it for about 10 hours! When finished, you can drain off the whey for a thicker yogurt.

Vegetarian Mexican Casserole

1 can corn
1 can black beans, rinsed and drained
1 can diced tomatoes or Rotel tomatoes
2 cups brown rice (cooked)
1 cup salsa
1 cup sour cream
1 cup shredded cheese of choice
1/4 teaspoon pepper

Mix ingredients together and pour into a greased casserole dish. Top with green onions and more shredded cheese. Bake at 350 degrees for 50 minutes.

Cooked, shredded chicken
Sauce -
About 1 cup balsamic vinegar
About 1 cup mayo
Garlic powder to taste
Italian seasoning to taste
