To make shallots last longer, store them in a jar of water instead of in the fridge. Keep changing the water every day or 2 and keep trimming the dead bits off. They'll continue to grow for a while before dying off. Place on the windowsill for quicker growth, or on a darker spot on the bench for slower growth. You can even put them in a jar in the fridge to halt the growth if you're not eating them.
