Instant Poha Kheer in 15 Minutes
Ingredients:
1. 1 litre full-fat milk
2. 6 tsp poha (flattened rice)
3. Sugar, to taste
4. 2 tbsp saffron-infused milk
5. ½ tsp cardamom powder
6. 8–10 almonds, thinly sliced
Method:
Prepare the Poha:
1. Rinse the poha thoroughly twice under running water.
2. Soak it in water for 5 minutes, then drain completely.
3. Divide the soaked poha into two equal portions.
4. Add a little milk to one portion and crush it gently to form a smooth mixture.
Prepare the Kheer:
1. In a heavy-bottomed pan, bring the full-fat milk to a boil.
2. Add the crushed poha-milk mixture to the boiling milk.
3. Stir continuously and add sugar according to your taste.
4. Boil for 3–4 minutes while stirring to avoid sticking or burning.
Flavor the Kheer:
5. Add saffron milk, cardamom powder, and almond flakes.
6. Continue to boil for another 8–10 minutes, stirring occasionally.
Finish:
Turn off the heat and let it sit for a couple of minutes.
Serve warm or chilled, as desired.
Serving Suggestion:
Garnish with additional almond flakes or a few strands of saffron for an elegant touch.
