Yaki Udon Stir Fry Noodles

These udon noodles are the perfect recipe for a healthy and flavorful dinner or meal prep! Add whatever vegetables you have on hand and add your choice of protein. The sweet, savory, and spicy sauce brings it all together! Enjoy!
Ingredients:
-1 package of udon noodles (fresh or frozen)
-vegetables of your choice (bell peppers, mushrooms, carrots, onions, etc.)
-protein of your choice (tofu, meat, etc.)
-1 tbs minced garlic
-1 tbs minced ginger
Sauce:
-1/3 cup low sodium soy sauce
-1/4 cup rice vinegar
-2 tbs honey
-2 tbs brown sugar
-1 tbs sesame oil
-1 tbs sriracha
-1 tbs cornstarch
-1/2 tsp mushroom bouillon (optional)
-1/2 tsp red chili flakes
Instructions:
-wash, cut, and prepare all the vegetables
-cook protein of your choice and set aside
-bring a large pot of water to boil for the noodles
-set a wok on high heat and add 3 tbs neutral oil
-cook vegetables in order from longest cooking time to shortest
-while vegetables cook, add noodles to boiling water and cook according to package instructions
-transfer noodles to wok and add sauce; mix well
-once combined and sauce thickens, turn off heat
-garnish with sesame seeds and green onion
-transfer to meal containers or enjoy immediately
-enjoy!
