MAKHANI TAWA BOTI
Ingredients
Boiled chicken 1 kg 16 pcs
Crushed garlic 1 tbsp
Ginger garlic paste 1 tbsp
Butter 4 ounce
Oil 2 tbsp
Crushed red pepper 1 ½ tsp
Chopped green chilies 4
Lemon juice 2 tbsp
Salt 1 ½ tsp
Yogurt 3 tbsp heaped
Crushed cumin roasted 1 tsp
Allspice ½ tsp
Chili powder 1 tsp
Green chilies 4 cut in julienne
Sliced onion 1 for garnishing
Ginger julienne for garnishing
Chat masala for garnishing
METHOD
Boil chicken with salt and ginger garlic paste, and 1 ½ cup water. Heat oil and butter on a tawa, add chopped lassan, fry, then add yogurt, ginger garlic paste, salt, crushed red pepper, crushed green chilies, chili powder, fry well, add in boiled chicken, cover and cook for 10 mins, then add on lemon juice, roasted and crushed cumin, chat masala, allspice, fry well, lastly garnish with sliced onion, ginger julienne, serve on a tawa.

PUNJABI CHANA PULAO
Ingredients
Boiled chickpeas 2 cups
Chopped onion 1 cup
Salt 2 tsp
Turmeric ½ tsp
Yogurt 1 cup
Black pepper ½ tsp
Oil ½ cup
Mixed allspice 1 tbsp
Green chilies 6
Coriander leaves chopped ½ cup
Mace grounded ¼ tsp
Nutmeg grounded ¼ tsp
Fennel seeds grounded ½ tsp
Roasted and crushed cumin ½ tsp
Ginger finely chopped 1 tbsp
Tomato slices 1 cut in rounds
Boiled peas 1 cup
Brown onion ½ cup for garnish
Rice ½ kg soaked
Ginger garlic paste 1 tbsp
Boiled eggs for garnish
METHOD
Heat oil in a pan, add whole spices and onion with boiled chickpeas, add in all the dry spices, ginger garlic paste, fry well, add yogurt, chopped green chilies, fry masala well, add chopped ginger with nutmeg, mace powder, and soaked rice, add water for rice, leave it on dum. Lastly add slices of tomato, coriander leaves, green chilies, leave it on dum, remove in a platter and garnish with brown onion.
