HOW TO MAKE AUTHENTIC PUERTO RICAN SOFRITO, MOJO, AND ACHIOTE OIL: 3 super simple recipes.

Sofrito Recipe:
Ingredients
-2 green bell peppers
-1 red bell pepper
-2 bundles of Cilantro
-1 bundle of Culantro/Recao
-10 ajices dulce
-1 large onion
-2 fistfuls of peeled garlic (about 3 full bulbs)
-1/4 cup to 1/2 cup of water (Eyeball it. See how it starts to mix and if it needs help, pour a little at a time until you get that movement)
Instructions
-Wash all your ingredients and give most a rough chop (garlic and ajices dulce don’t need that)
-Place a little bit of each ingredient in your blender or food processor and begin to blend on low-medium speed. When you see it starting to get to that pesto consistency, stop blending and add more of each ingredient until your blender or food processor is full.
-Transfer the mix onto a strainer and let it sit for up to 5 minutes as that green juice is collected. You’ll need this for your Mojo (written recipe next below)
-Place the sofrito in a storage container in the fridge for up to 3 weeks or in ice cube trays in the freezer for up to 6 months.
Mojo Recipe:
Ingredients:
-Sofrito Juice (using the previous recipe)
-1/3 cup of the citrus juice of your choice (lemon, lime or orange)
-1/3 cup of Vinegar (white or apple cider are good)
-1 tsp of Ground Oregano
Instructions:
-Mix all ingredients and transfer into your storage container. It can be refrigerated for up to 2 weeks. Frozen for up to 6 months.
Aceite de Achiote/Achiote Oil Recipe:
Ingredients
-1.5 cups of Extra Virgin Spanish Olive Oil (preferred but regular EVOO will work as well)
-1/2 cup of Achiote or Annatto Seeds
Instructions
-Place both Items in a saucepan and over low-medium heat allow the elements to heat up and when you see it simmer and/or make a crackling noise, leave it on for 30 to 60 seconds. Move away from heat and allow it to cool off. Strain the seeds out and transfer to your storage container. Can be left out at room temperature.
